I bought one of these at a local grocery store deli and it was so good that I tried to duplicate it. They came out really good!
First I sauteed onion and butternut squash till it was tender. I added kale and sauteed until it was wilted. I seasoned with thyme, salt and pepper.
Next I made a crust. I think I would use phyllo dough or puff pastry next time as this pie crust was a bit heavy.
Roll out the dough, fill with the squash mixture. Add a dollop of goat cheese, sprinkle with roasted pumpkin seeds and fold the dough up around the mix. Bake till the crust is golden brown.
These were not only a pretty dish, but they were very tasty!!
Wow......that looks good, and it's a nice change of pace too. I need to learn how to make yummy mixes like this.
