Our local farmer's market is still churning out delicious fresh produce and helping me fill in where my garden didn't perform.
The other night I made a stuffed bell pepper and corn on the cob.
I stuffed the pepper with brown rice, chopped almonds, fresh parsley, diced tomatoes, feta cheese, sauted onions and garlic, salt, and pepper.
Yum!
Ooo! This looks super. I need to go make some dinner now and hopefully put a little blog post up later tonight. We are so slacking!
